the food of NYC...

you know me... I love food - so here's (some of) what we ate this past weekend in NYC...

first up, The Cupcake Stop - yum... I love street food...


so many choices...

we went with funfetti - and it was great!

then for lunch on Friday we went to SMAC - a restaurant that only serves Mac & Cheese?! YES please... Steve-O and Carrie had cheeseburger mac and cheese which was AMAZING...

I had the parisienne (brie and fig - amazing...)

and DJ had La Mancha (manchego, fennel and onions... also YUM)

then for dinner we ventured to Dim Sum Go Go in Chinatown for an amazing dim sum dinner where the food kept flowing...

clearly we all had our fair share of sake (minus Noah of course)... oh we're fun...

there was also an amazing five course Italian dinner at the wedding, some yummy sandwiches, wings, and much much more... I'm clearly wearing my fat girl pants and eating salads all week. oh well, it was worth it! :)

berkshire fall wedding...

in another life... like one where I didn't elope on new years day - I would have loved to have had a fall or summer wedding... I'm just not a winter person.

However, I do love the symbolism behind starting a new year together and think our (second) wedding will be just perfect for us (just like our first).

That doesn't mean I can't wistfully dream of fall weddings like the one we went to last weekend - our friends Iona and Dan got married on a beautiful berkshire fall day...

...and this was taken right before I decided that my phone should have a slumber party at the wedding venue... oh and look, my lazy eye decided to make an appearance... looks just like a ZTA social in college... special.

I wish I had brought my Nikon and gotten more shots - I didn't even get one of the bride and groom?! seriously. who am I? anyways, hope you enjoyed that snippet - don't worry NYC pics are coming soon!

missing in action...

sorry I've been missing in action - hectic four day work week and a long and amazing weekend in NYC, sprinkle a wedding or two in there and DJ opening a new cafe... life's been crazy/wonderful...

I guess you can say my head's been in the clouds...

spicy mac & cheese!

working from home today - so I decided to put up shop in the kitchen (laptop, cellphone, stove - it works)... so I decided to make some homemade mac and cheese and I saw this recipe on a blog once (I thought I saw it on SelfishlyHappy - but then I went there and couldn't find it so I turned to my trusty friend google) and I found it again on Annie Eat's site - the orginal recipe can be found here and here... and now here with my adaptations [in bold/italics]:

Spicy Mac and Cheese

Ingredients:
4 cups pasta shapes (I like cavatappi) [I used a whole box of cavatappi]
1/3 cup onion, finely chopped
1/3 cup roasted red pepper (jarred or home roasted), finely chopped [I used one hot and one sweet pepper]
1-2 jalapeno peppers, seeded and finely minced [I used 1/2 a can of diced green chiles]
6½ tbsp. butter, divided
4 tbsp. all-purpose flour
2½ cups milk
¼ tsp. cayenne pepper
¼ tsp. onion powder
¼ tsp. garlic powder
½ tsp. salt
¼ tsp. ground black pepper
8 oz. colby jack cheese, shredded
4 oz. pepper jack cheese, shredded
4 oz. sharp cheddar cheese, shredded
4 oz. baguette or crusty Italian bread, torn into large chunks [I used panko breadcrumbs = my fav]

Directions:
Bring a large pot of water to boil. When the water boils, cook the pasta according to the package directions. In the meantime, melt ½ tablespoon of butter in a small skillet over medium-high heat. Add the onion, red pepper and jalapeno to the skillet and cook, stirring occasionally until fragrant and tender, about 5-7 minutes. Remove from heat and set aside.


In a medium saucepan, melt 4 tablespoons of butter over medium-high heat. Once the butter is completely melted, whisk in the flour. Cook the mixture, whisking constantly, until it turns a light golden brown color and begins to foam, about 2 minutes. (Be careful not to burn!) [of course, I burned it AND spilt milk allover myself when opening the milk bottle, AWESOME] Whisk in the milk until well blended. Cook the mixture, whisking or stirring frequently, until it begins to bubble and thicken, about 5 minutes. Reduce the heat to medium-low. Whisk in the spices. Add the cheeses to the mixture and whisk until completely melted and well incorporated. Remove the mixture from the heat. [I almost didn't get pepper jack and colby jack because they didn't have it grated but I put my big girl panties on and bought blocks of each and grated them and I'm really glad I did because I think it makes the recipe!]

Preheat the oven to 375° F. Grease a 2-quart casserole dish. [I used 3 quart - I don't see how it fits in a 2 quart?!] Return the drained pasta to the large pot. Add in the cooked vegetables and the cheese sauce, and mix until well blended. Transfer the mixture to the prepared casserole dish.

Use a food processor to pulse the bread into coarse crumbs. Transfer the crumbs to a small bowl. Melt the remaining 2 tablespoons of butter and toss with the bread crumbs. (I also mixed in a dash of cayenne pepper.) [OR just use panko breadcrumbs with cayanne pepper] Sprinkle the crumb mixture in an even layer on top of the pasta. Bake for 25 minutes, or until the mixture is heated through and the topping is golden brown. Let stand 5-10 minutes before serving.
 
I'm telling you this dish is AMAZING. My version wasn't too spicy but had just enough kick... I'm eating some right now as a late lunch and have a feeling I will be feeding myself this for lunch and dinner for the rest of the week since work has kidnapped my husband... maybe I'll even let him have some... aren't I a nice wife?
 
IN OTHER NEWS - I FOUND MY iPhone!!!!! Yup, the wine must have told me that leaving on the table I was sitting at was a good idea.... luckily it was there when I went by the wedding venue. SO happy. happy tuesday!

insert creative blog title about my weekend here....

oh what a weekend - hell, what a week... my poor husband has been working like crazy (his second cafe opened on Tuesday) and running on E so I went down to see him at the new cafe on (Monday, Wednesday, Thursday and) Friday night with our friends Ben & Ian - we had a great dinner and went to the restaurant next door for drinks. As always, it was so good to catch up with Ben and Ian and just talk, laugh and share. We headed home early as DJ was exhausted (fell asleep on the car ride home).

The next day, Danny worked - I went to crossfit, took Oliver for a walk and hung out with Jenny & Will... The three of us went to have brunch at the Cafe and then went up to Beartown State Forest to look at pretty leaves... of course I didn't have my camera but it was REALLY beautiful! Danny came home later that afternoon and passed out - I tried to nap but ended up just playing sudoku... then we met up with Will & Jenny for gyros for dinner and went to a bonfire. The bonfire was interesting enough, just not for me... cold, smokey, and outside.... enough said. I can't lie it was entertaining watching young girls dance like idiots and make fools of themselves - seriously... get help. Then we went downtown and had a few drinks before heading home...

Then Sunday came around - aka day of my mental break with reality... no, seriously - it was bad. DJ and I got up took the dog for a walk, he got a haircut, I got an attitude. I don't know what it was but I just was having a day where nothing felt right - awesome. we went to our friends Iona and Dan's wedding - which I'll post about later this week... the wedding was beautiful, personal, and just captured the two of them so well! While at the wedding I decided that prohibition was coming back and this would be my last opportunity to drink wine - so I drank WAAAY too much wine. Now I don't know about you guys but waaay too much wine usually results in not great things for this gal... yesterday was no exception - one big fight with my husband and a lost iPhone later... ugh. yuck.

wait? did you read that correctly? no - not the fighting with my husband part, lets be real everyone does that - I LOST MY IPHONE. I have the shakes... okay, that might be from the hangover but also because I really need my phone....

...it has everything - not just the ability to communicate, all my numbers, 500 pictures of Oliver and don't even get me started on wordswithfriends, twitter or facebook... AAHHH. AND I'm definitely not eligible for an upgrade OR rich so this is a problem. I keep calling it and it just keeps ringing. I'm going to go out to where the wedding was (outdoors) later today before I go to the dentist.

Are you kidding me. This is the worst day ever - hangover, can't find my iPhone AND I have to go to the dentist. can I go back to bed now? Okay, I'm off to go sing Daniel Powter lyrics into my coffee.
